I learned today that I need to look for the DOP symbol.
Is that the same as DOC?
It looks like Amazon is cheaper than Costco.
I said this somewhere in one of those threads
But it’s not “Chicago” style per se, I think of it more of a unique pan style.
Costco usually carries Kirkland brand (in-house) San Marzano
Pretty reasonably priced, and certified DOC.
Pequod's is not
It is a version of "deep dish," but its not the casserole/cheese-stuffed version you'll find at the places you mentioned.

Sometimes real, but those are expensive.
I've got a local market with the D.O.P. certified cans. They're like 9 bucks a pop for those. Last time I did those was for my wife's birthday.
I gotta be honest, *I* can't tell the difference between the real and the "style" ones. Though I haven't done a side-by-side. Then again my sauce includes a fair bit of salt and herbs, so those flavors carry a lot.

Where do you get those? Or are they just San Marzaono"style" tomatoes?
I recently rewatched Stanley Tucci's "Searching for Italy". It was pointed out that the San Marzano region is way too small to produce the millions of cans of
San Marzano tomatoes that are sold in the world every year.
So most of what we buy in Whole Foods or wherever are basically knockoffs.

It’s the most overrated shit in the world.
Hopefully these places you cite are NY style, the city where the most average nondescript neighborhood joint crushes Uno, Due, Malnati etc. Much less Detroit which of course is the superior pizza to anywhere save maybe Rome which is similar to NY but even better.
I’ve lived in various places including Chicago which overall has great food. But even Portland has far better pizza if we are measuring it against “Chicago style”.
They don’t call it the Second City for nothing.

I just got a Bertello Grande 16 pizza oven for Christmas and love it!
Definite trial and ERROR, but it’s given me something to use my sourdough starter on other than bread.
Fwiw been following Chad Bianco’s style and ideas on dough and toppings. Lots of fun!
